40 g honey
120 g bread flour
170 g whole wheat flour
10 g salt


Dough too sticky. Make it more STIFF, reduce water. Great flavor and rose very nicely before handling made it lose its shape tho.

Rose 8 hours/overnight
Shaped in a loaf pan and let bread rise 3-4 hours

It's good but I would love for it to rise more.
Try adding vital wheat gluten?

added 1/2 cup sourdough starter
used 190 g whole wheat flour
2 large eggs instead of medium
2 cups greek yogurt instead of buttermilk
baking powder instead of baking soda

pretty thick even after overnight sitting but it did turn out delicious!
very sour. using baking soda as directed would help
maybe swap milk for yogurt or try 50/50 milk/yogurt to thin it out and make it less sour too?
the texture was soooooo good and crispy

8/11 bake: baking soda and 2 hour rise and no other adjustments from above, did indeed turn out great

Sourdough mod: use 120 g sourdough starter. Reduce the amount of flour to 2 ½ cups. instead of the ½ cup of buttermilk and 1/3 cup of water,use 1/3 cup of whole milk and ¼ cup of water. If the starter is fresh and active, use only 1 tsp of the instant yeast. If using older discard use 2 tsp.

for some reason this dough recipe DID NOT WORK as written for me... the dough was soooo wet.
Maybe because my spinach was frozen/thawed instead of fresh?
the spinach was cooked til no liquid remained.

made 1.5x recipe because I had 9 oz. spinach and nearly had to DOUBLE the flour to get it to come together.

recipe as I made:
-450 grams bread flour
-180 grams sourdough starter
-3 large eggs
-9 ounces frozen/thawed spinach

-sautee the spinach until dry
-blend spinach and eggs into a fine puree
-mix with a dough hook

note for next time: pay close attention to the flour amount. this amount was added incrementally so there may be some error due to repeated small scale measurements.

-1 tablespoon flaxseed meal (ground flaxseed)
-1 tablespoon water
-1/2 cup oat flour
-1/2 cup nutritional yeast flakes
-1/2 cup sourdough discard cold from the fridge
-1 heaping tablespoon seasoning blend with salt OR 1 tbsp seasoning + 1 tsp salt
-1/4 cup olive oil

Whisk together flax and water. Mix dry. Add wet to dry.
Bake at 325 for 15+10 mins after rolling out thin

Cheat this with an overnight rise in a cool spot.
This can be made as a white bread replacing the whole wheat with more bread flour. But Aimee actually likes the whole wheat better?
