2 tbsp avocado oil
3 onions, diced (medium size)
10 cloves garlic
2 cups sweet corn
2 tbsp cumin
1 tbsp chili powder
1 tsp salt
2 lbs ground turkey
2 cups sweet corn
2 28-oz cans tomato pureed
1 28-oz can pinto beans with liquid, pureed

-start heating tomato and corn on slow cook High setting in instant pot
-on stove: sautee onions in oil til starting to brown
-add garlic, spices, peppers, sautee til fragrant
-add turkey, cook through with onion mix
-add to pot, add bean puree too, leave on high for 6 hours
-longer is better
-overnight would probably kick ass

Used a lean rump roast, not as tender as I'd like but the flavor is good.
Try overnight next time if using rump roast? Or pressure cook?

Substituted 1:1 by weight chopped dates for sugar
Did not drain, cooked off the liquid on the stove top and mashed after pressure cook

One of the comments suggested changing 1/4 cup to 3 tbsp soy sauce and I did this. Increased liquid to compensate by using 2 whole eggs.

Made smaller cookies (like 2 tbsp size rather than 3 tbsp) does not affect cook time.
Still good after feeeze/thaw with peppercorn topping.

Bob suggested more pepper in the cookie, that would give it less broad appeal but I would like it more too

Used impossible beef for the meat. (Double recipe = 3 packs impossible) Used whole wheat bread ground up for the breadcrumbs. Doubled the allspice and pepper. Omitted the milk. Held together well for the most part but could use better binding still. Try another egg next time.

For some reason this didn't thicken up with the arrowroot. The flavor was good though. Give it another try with potato or corn starch.
