Half recipe: used 3 oz milk 3 oz yogurt in place of buttermilk
needed more liquid. added 2 oz of milk to get it to come together. try 4 oz of each next time.
also replaced 2 tsp baking soda with 1 tsp baking soda 1 tsp baking powder to compensate for the lower acidity of the milk/yogurt mix. this was correct!

note to future self: This may have potential as a sourdough discard recipe, replacing buttermilk and some of the flour with starter...

Substituted erythritol for the sugar. 3 oz. Chopped cranberries. Zest of some tangerines. Replaced 1/2 cup of flour with 1/2 cup sourdough starter. Added only 2 oz milk. Dough was still very wet and spread when baked. Not sure if that's due to the started discard being pretty old with a layer of liquid on top or if it might be better to omit the milk entirely.

Scaled up 3x. Replaced 1 lb ground pork w bacon ends. Added 4 cubes apple cider (add more?). 1 tbsp cinnamon and pepper. 1 tsp nutmeg. No caraway. 1 tbsp salt.
Stuffed into hog casings and driedfor 24 h and pricked 2x. No bursting. Elita smoked them on low heat

edit: family would like a edium grind on the meat, not the fine grind I did

Dough too sticky. Make it more STIFF, reduce water. Great flavor and rose very nicely before handling made it lose its shape tho.

6 large eggs
1/4 cup whole milk
1 tbsp revolution seasoning
Half a small leek, chopped finely (I think I used about half a cup total?
1 cup shredded sharp cheddar

Roll out the pie crust and cut out with my 1-cup measure (made 11 circles with 1 roll, 1 re roll, 1 rollout of scraps. 6->4->1)
Line greased muffin tins with pie crust rounds, place in fridge to chill while oven is preheating, preheat to 350 degrees F
Whisk together eggs, milk and seasoning
When pie crusts are chilled, pour egg in
Then sprinkle in leek and cheese
Bake for 20 mins, turn around, then bake 10 more mins

Notes:
Could use less filling more cheese
Increase heat and reduce bake time for a more crispy crust?
Frozen/thawed crust with sourdough mod worked great here

1 package orange jello
Dissolved in 2.5 c boiled water
2 envelopes Knox gelatin
1/4 cup soy milk
1/4 cup boiling water
1 can coconut milk

-bloom gelatin in soymilk
-Whisk in boiling water til dissolved
-Whisk in coconut milk and pour into sprayed jello mold
-make orange jello and let cool to room temp while coconut portion firms up in fridge
-Pour in orange after coconut has set, let sit overnight

(Initially used 3 envelopes Knox gelatin, that was too much)

10/17/23 update:

4 TABLESPOONS marjoram. 2 tbsp onion powder. At least 1 tbsp salt. 1 tbsp pepper.
Steaming also caused casings to burst. Research causes of casing blowouts next time.

Very underseasoned. Double the marjoram, double or maybe triple the pepper? Also put in some onion powder for sure.

Many sausages burst but this is almost definitely user error. But I wonder if you tried steaming rather than boiling for the final cook.......

For the pork I pressure cooked a hock 90 mins and that worked well to get it falling off the bone

used 190 g whole wheat flour
2 large eggs instead of medium
2 cups greek yogurt instead of buttermilk
baking powder instead of baking soda

pretty thick even after overnight sitting but it did turn out delicious!
very sour. using baking soda as directed would help
maybe swap milk for yogurt or try 50/50 milk/yogurt to thin it out and make it less sour too?
the texture was soooooo good and crispy

8/11 bake: baking soda and 2 hour rise and no other adjustments from above, did indeed turn out great

it did NOT make nice clusters. probably because of cutting the sugar
HOWEVER due to the sweetener in the protein powder the sweetness level was just fine. DO NOT increase sugar until you get an unsweetened protein powder
try adding an egg in the meantime

converted amounts to weight for ease of measurement (fuck using a measuring cup for PEANUT BUTTER and HONEY)
180 g rolled oats
2 scoops whey protein* (65 g)
9 g cinnamon
25 g ground flaxseed
1/2 tsp fine sea salt
84 g honey**
56 g coconut oil
70 g peanut butter
80 g chopped walnuts

instructions: preheat oven to 300 F (did 310 on my oven)
melt peanut butter, honey, and coconut oil on a double boiler
stir together dry ingredients
stir dry ingredients into wet
bake 15 minutes
stir granola
bake another 15 minutes
let cool on pan
